There are as many variations of chocolate truffles as you can imagine. You can use milk chocolate, white chocolate, dark chocolate, semisweet chocolate, or even a combination of two (to achieve “black-and-white” chocolate truffles) - and the type of chocolate used can be different for the ganache and the shell. Chocolate truffles can be rolled after coating in a variety of delectable powdered or finely chopped toppings: almonds, peanuts, walnuts, granulated sugar, cocoa power, crystallized or powdered sugar, sprinkles, nonpareil dots, and more. The ganache itself can be any flavor as well: whiskey, coffee, espresso, chili, maple, honey, ginger, or even fruit-flavored truffles such as strawberry, raspberry, or orange. The phrase “chocolate truffles” can be a bit misleading, as the candy known as truffles comes in so many different varieties.
